1 package fresh baby spinach, washed, stems removed
1 pint fresh strawberries, washed, hulled and sliced in half
1/2 cup toasted pecans or walnuts
½ small red onion, sliced

Dressing
⅓ cup red wine vinegar
½ cup sugar (I use Truvia or stevia instead)
1 ½ Tablespoons poppy seeds
1 ½ Tablespoons minced onions
1 teaspoon dry mustard
1 cup oil

Mix the dressing, adding oil last. Put spinach, strawberries, nuts and onions into a salad bowl. Stir dressing and add just before serving.

You can add grilled chicken breast strips to this if you want. This was served at a friend's dinner party and I begged for the recipe. It's one of my favorite salads.
