2 pounds Impossible Meat, ground beef/turkey
⅓ cup Chili Seasoning Mix (see below)
1 can diced fire-roasted tomatoes
1 or 2 cans stewed, sliced tomatoes
2 jars tomato/spagetti sauce
(Prego Chunky Garden)
1 can black beans, undrained
1 can red kidney beans, undrained
1 can corn
diced celery (to taste)
* new addition of hot salsa (Aldi's "Cowboy Caviar" - 1/2 jar) to taste

Optional Toppings: sour cream, shredded cheddar, green onion/scallions,diced red onion, Frito chips

Seasoning Mix
¾ cup chili powder
2 T. ground cumin
2 T. dried oregano
2 T. dried minced onion
2 T. seasoned salt
2 T. sugar
2 tsp. dried minced garlic

Step 1
Brown beef or turkey in a Dutch oven or large pot over medium-high heat, stirring often, 4 to 5 minutes or until ground meat crumbles and is no longer pink; drain well. Return to pot; sprinkle evenly with seasoning mix, add celery; sauté 1 minute over medium-high heat.

Step 2
Stir in remaining ingredients; bring to a boil over medium-high heat, stirring occasionally. Cover, reduce heat to low, and simmer, stirring occasionally, 15 minutes.

Step 3
Set-up topping options: Frito chips, sour cream, scallions, shredded cheddar cheese, diced red onion
