1/3 cup soft butter
1 c. granulated sugar
5 medium eggs
1 T flour
1/4 tsp. salt
1 1/2 tsp. to 1 T dark rum
1 c. light corn syrup
2 c. finely chopped pecans
Unbaked pastry for a 9-inch single crust pie

Directions:
Directions:
Cream butter and sugar. Add eggs, one at a time. Blend in flour, salt, rum, corn syrup and pecans. Pour filling into pastry-lined pie pan. Bake at 350 degrees for 50 minutes or until pie is set. Let cool about 2 hours before serving. This pie improves with chilling!

I wouldn't put another pecan pie in this book unless it was worthy of it! This is EXCELLENT. It is a light colored pie and is not sickeningly sweet. The filling is almost like a clear custard with the pecans on top. It is really good with some rum-flavored whipped cream on top! So easy to make too :)
