Ingredients: 1 1/4 c all purpose flour 3 tsp baking powder 1/2 tsp salt 1/3 c sugar 1 c All-Bran cereal 1 c milk 1 egg 1/4 c shortening or vegetable oil 1 cup raisins or dried cranberries

Directions: |
Directions:Stir together flour, baking powder, salt and sugar. Set aside.
Measure cereal and milk into mixing bowl. Stir to combine. Let stand about 2 minutes or until cereal is softened. Add egg and shortening. Beat well.
Add flour mixture, stirring only until combined. Add raisins or cranberries and stir. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups.
Bake in oven at 400 degrees about 20 minutes or until muffins are golden brown. Serve warm.
Spicy Applesauce Muffins: Stir 1/2 tsp ground cinnamon and 1/4 tsp ground nutmeg into flour mixture. Decrease mild to 1/4 c. Stir 1 cup applesauce into cereal-milk mixture.
Cherry-Nut Muffins: Stir 1/2 c finely cut maraschino cherries and 1/4 c coarsely chopped nuts into batter after bearing in egg and shortening. |

Notes: This is the original bran muffin recipe that was on the cereal box years ago. It is always good and good for you! You can also up your game by putting in the applesauce or the cherries for a different flavor with all the great fiber!
