* 1 cup of chopped onion
* 2 Tbsp olive oil
* 1 1/2 Lb of sauerkraut, rinsed and well drained
* 1 cup of peeled and coarsely chopped apple
* 4 bacon strips,cooked & chopped
* 1 can ( 6 oz) of apple juice
* 1/4 cup of brown sugar
* 1 tsp caraway seed (optional)

Directions:
In a non stick fry pan cook (on medium heat) the onions covered (stir occasionally)until starting to brown. Add the sauerkraut , bacon and apples and stir into onions well and cook , uncovered ,10 to 15 minutes( stirring frequently) until kraut is lightly browned. Mix other ingredients in a bowl and pour over kraut. Stir mixture and cook covered (simmer) for 15 minutes stirring occasionally. Serve hot or cold
Hint: 1) By browning the kraut in the onions, the sugars from the onions sweeten the kraut and enhance the flavors.
2) The sauerkraut can be served as is or it can be served on top of various cuts of pork such as chops, ribs , hocks , ham and any kind of sausage links. Follow the recipe for the meat such as grilled or pan fried and add the kraut. Cooking the pre cooked meat and pre cooked kraut together for a short time enhances the flavor.
3) 1 cup of sauerkraut(raw) is about 1/2 Lb
4) About 1 1/2 Lb of kraut will go nicely with up to a pound of meat.
