1 lb. pork tenderloin cut to 1" cubes
Marinade:
1 tbsp. white wine
2 tbsp. soy sauce
1 tsp. ground ginger
1 clove garlic, pressed
Sweet and Sour Sauce:
¾ c. & 2 tbsp. sugar
2 tbsp. soy sauce
1 tbsp. white wine
½ c. wine vinegar
½ c. pineapple juice (from chunks below)
5 tbsp. catsup
½ c. water
2 tbsp. cornstarch
Batter for pork:
1 egg
4 tbsp. cornstarch
Vegetables:
½ c. green pepper cut into 1" squares
1 large onion,cut to 1" squares
1 can bamboo shoots, drained, cut lengthwise into ⅓'s
1 can pineapple chunks, drained
oil for frying
Cooked rice for serving

Directions:
Directions:
Mix marinade ingredients together. Add pork cubes and marinate while preparing sauce and vegetables. For the sauce combine sugar, soy sauce, white wine, wine vinegar, pineapple juice, and catsup. Bring to a boil. Combine cornstarch and water and slowly add to the boiling mixture stirring constantly until thickened. Turn heat down (just heat to keep sauce warm). Mix batter. Add drained meat to butter, stir to thoroughly coat. You may need to add more cornstarch if necessary to achieve a thick, stiff almost hard coating on all pieces of meat. Fry at 420º until golden brown. Drain with slotted spoon and set aside on a platter. Stir fry vegetables until tender. Combine vegetables, meat and sauce. Serve hot over cooked rice.
