3 lbs baking potatoes, preferably Idaho, peeled and sliced 1/4" thick

2 cups milk
3 cloves garlic, minced
1/2 tsp salt

3 oz grated Gruyere cheese
1/2 cup grated parmesan cheese
Pinch cayenne pepper

1 cup heavy cream

Preheat oven to 375º.

Grease casserole dish. In large saucepan, combine 2 cups water with the milk, garlic and 1/2 tsp salt. Add potatoes and bring to a boil, Simmer until potatoes are tender about 8 minutes.

Remove saucepan from heat and,using a slotted spoon, transfer half of potatoes to butter 9x13 baking dish; arranging in an even layer. Sprinkle with half the cheeses and cayenne; season with salt and pepper. Repeat. Pour heavy cream over top. Bake until golden and crisp on top, 40-45 minutes. Let stand 5 minutes before serving.
