4 large, ripe pears, pealed and thinly sliced
1/3 c. sugar
1 T. cornstarch (more if the pears are really juicy)
1/8 tsp salt

Topping:
1 c. sharp cheddar cheese
1 c. all purpose flour
1/2 c. melted butter
1/2 c. sugar
1/2 tsp. salt

Directions:
Directions:
In a bowl, combine pears, sugar, cornstarch & salt. Remember if your pears are really juicy add more cornstarch. Pour into a pie shell. Combine topping ingredients until crumbly; sprinkle over filling.

Bake at 425º for 25-35 minutes or until golden brown and cheese is melted. Serve warm.

I love this pie with my whole heart (Gib does not). For the record I doubled the topping recipe so if it is too much for you, by all means divide in half (it won't be). This pie is not super good the next day because the crust gets really soggy fast.
