1 sweet onion
Olive oil.
1 package 12-16oz frozen spinach
2 russet potatoes.
3 cups of cold water.
4 eggs
1/2 cup oil
1 package of potato pancake mix
1/2 teaspoon salt

Directions:
Directions:
Finely chop onion and saute in olive oil. After it's soft, add frozen spinach and cook til spinach and onion are both done, and moisture has evaporated. Let cool a bit.

While spinach and onion are cooking, grate two russet potatoes. Put in them in a bowl with three cups of cold water. Beat eggs and stir into the potatoes. Stir in oil, the potato pancake mix, salt, pepper and the cooled vegetables. Let sit about 20-30 minutes. If too dry (firm), stir in a little more water. It should be stiff, but not like a brick. Pour into a greased 81/2x11 pan and bake at 375 for about 45-55 minutes. Should be browned on top, and an inserted knife comes out clearish, but not dry.
