1 lb butter
1 c chopped onion
1 c chopped green pepper
1 c chopped celery
1 lb fresh mushrooms
1 c flour
4 cups warm milk
1 c dry sherry
1/2 c chopped parsley
4 chopped pimientos
1 tsp liquid hot pepper sauce
1 tsp pepper
4 tsp sale
Juice of 2 lemons
3 lbs plain boiled shrimp
10 crackers, crushed
Paprika
6 servings cooked rice

Melt 2 sticks (1/2 lb) butter and saute onion, green pepper and celery in it. Add mushrooms and saute lightly. Make a white sauce: melt remaining butter. Add flour. Slowly stir in warm milk. Season with sherry. Add sauteed vegetables, parsley and pimiento. Season with pepper sauce, pepper, salt and lemon juice.

Arrange shrimp in bottom of large casserole dish. Pour white sauce over shrimp and top with crushed crackers and paprika.

Bake in 300 degree oven until piping hot. Serve on beds of rice.
