Three good-sized roots
2 cups more or less vinegar
Beet juice from pickled beets
Five or six ice cubes or ice water
sugar
Two cans pickled beets

Peel Roots, trim ends, cut into 1-inch chunks, put into Cuisinart with steel knife add three or four ice cubes chop until finely grated allow to stand for five minutes or longer it will get hotter the longer it sits. add two cans of pickled beet juice and three quarters can of the beets vinegar to desired moistness and color. can also add sugar to taste. Makes 4 pints
