Pumpkin Roll Recipe

1 tsp. Baking soda
3 eggs well beaten
1 cup of sugar
⅔ cup of canned pumpkin
1 tsp. Cinnamon
cup flour
⅛ tsp. salt
cup nuts (optional)

3 tbs. Soft butter
8 oz Cream cheese
tsp. Vanilla
1 cup of 10x sugar

Grease 10x15 cookie sheet & line with parchment/wax paper. Mix ingredients and pour onto cookie sheet. Bake for 15minutes @ 375 --- Turn onto a pillowcase sprinkled with 10x sugar, remove wax paper. Roll up & let cool in fridge (about 15-25 minutes)

Mix together icing ingredients and spread on cooled pumpkin--- roll back up and refrigerate!
Wrap in foil and serve or freeze!!!!
