4 large Egg Yolks, room temperature
3 Tbsp. EACH Water & Oil
1/4 cup PLUS 2 tsp. (75g) Sugar
1/2 tsp. Vanilla
3/4 cup PLUS 2 tsp. (84g) Cake Flour
1/4 tsp. Salt
1 1/2 tsp. Baking Powder
4 Large Egg Whites, at room temperature
1/4 tsp. Cream of Tartar
1/4 tsp. Sugar
100g Butter, softened
Sugar for Garnish

Butter cupcake pan or if using liners you can spray it with cooking spray.
Preheat oven to 350ºF.
Add yolks, water, oil, sugar & vanilla. Until combined & sugar has dissolved. Set aside.
In another bowl sift together cake flour, salt & baking powder; set aside.
On medium speed whisk together egg whites & cream of tartar, until frothy, slowly add the 1/4 cup sugar in while whisking, increase speed until whipped.
Now lets put it together to the flour mixture add the egg yolk mixture, mix carefully until combined then slowly fold in the egg white mixture. Pour into the cupcake pan & bake for 14 - 15 min.
Immediately turn over cakes & let cool. Flip back over & brush tops with softened butter & dip in sugar.
