Taro Bread Recipe

STEP 1
350g Taro - cooked, cubed & mashed
2 tsp. Taro Flavoring
---Set aside to cool until ready to use.

STEP 2
11g Dry Yeast
200ml Coconut Milk, warmed like bath water
1 tsp. Sugar
Proof for 10 min.

STEP 3
1 Egg, well beaten, opt.
50g Butter, softened

STEP 4
215g Sugar
500g Bread Flour
1 1/2 tsp. Salt
1 Tbsp. Cornstarch (make sure to remove 1 Tbsp of Flour before you add your cornstarch).
Whisk all the ingredients in STEP 3 until well mixed.

Using dough hook on stand mixer.
Once STEP 2 proof is done.
Add STEP 3 & stir until combined.

Now add STEP 1 then continue to mix for 1 - 2 min.
Now to this taro mixture add STEP 4 all at once.
Continue to mix on stand mixer "stir" for 10 min.

Scrap down, dough should be dry & half done mixing remove from bowl & hand knead for 2 - 3 min.
Spray with cooking spray, cover & let rise for 1 hour.

Preheat oven to 430ºF.
Shape down to whatever shape you desire. Let rest for 45 min., before throwing it in the oven.
Prepare oven with stone. Brush bread with egg wash & water. Bake for 17 - 20 min.

***NOTE: If making Challah make sure you adjust oven to 400F & bake for 20 min., or less time. Make sure you check the bread. This is a soft bread even the crust is soft & a sweet bread. You can add chocolate chips or top with sugar & other things.
