4 cups Flour
1/4 tsp. Salt
1 pkg. Dry Yeast
1 Tbsp. Sugar

Directions:
Proof - mix yeast with 1/4 cup water (115ºF) and 1 Tbsp. Sugar. Let stand for 2 - 3 minutes.

In a separate bowl add flour & salt then add the yeast. Knead for at least 5 min., adding more flour if necessary to keep the dough from sticking. Place in a greased bowl & allow to rise until double in size.
When dough has doubled in bulk, punch down & allow to rest another 1/2 hour. Then remove & knead for a few min. Roll out on a floured board & cut with a knife or cutter into circles about 3" in diameter. Lightly grease the inside with a little sesame or regular oil & fold in half. Steam over high heat for about 5 min., & remove to a warm plate.

These rolls are served with Peking Duck, Char Sieu, etc.

You may roll the dough into a long oblong & brush one surface with sesame oil & roll up as for a jelly roll. Cut into 3/4" thick slices. Press down with a chopstick on the outside surface of the roll, pinch the ends together & steam in an oiled pot for 8 min.
