4-5 c. sliced carrots (or baby carrots)
1/4 c. olive oil
4 cloves garlic, minced
3 tbsp. grated parmesan cheese
2 tbsp. bread crumbs (Panko)
3/4 tsp. kosher salt
1/4 tsp. ground pepper

Directions:
Preheat oven to 375º F.
Mix everything together - except carrots. Toss with carrots. Place on foil or parchment lined cookie sheet. Bake for 20 minutes - stirring & checking every 5-10 minutes. Cover if it starts to brown too quickly.
