1 cups white cornmeal
1/2 tsp. baking soda
1/2 tsp. salt
1 can cream style corn
2/3 cup buttermilk
1/2 cup jalapenos or green chile peppers, chopped
1/3 cup vegetable oil
2 eggs
1 cup grated cheese

Directions:
Directions:
Preheat oven to 400º.

Pour the vegetable oil in a 9x9 inch baking pan and heat in the oven while preparing the cornbread batter.

Place cornmeal, baking soda and salt in a large bowl. Stir in eggs, milk, creamed corn, and diced green chile or jalapeno peppers. Pour the heated oil into the batter, then spread half the batter into prepared pan. Add grated cheese. Spread the remaining batter over the cheese and bake for 25 minutes or until golden brown.
