Greek Potato Salad:

2 lbs of new potatoes
1/4 cup olive oil
1/4 cup red wine vinegar
1/4 cup mayonnaise
1/2 tsp salt
1/2 tsp pepper
1/2 tsp oregano

Salad Ingredients:

Romaine lettuce, cut up
Tomatoes
Cucumber, sliced
Greek olives
Sliced, pickled beets
Cooked shrimp, peeled
Feta cheese (I like to use feta made with sheep's milk)

Italian or Greek dressing






Directions:
Directions:
To make the potato salad, cook potatoes in boiling, salted water to cover 30 minutes. Cool slightly. Cut into 1-inch pieces. Whisk together oil and next 5 ingredients and combine with potatoes. Chill

Assemble the Greek salad in a large, rectangular pan. Top with feta at the end.
Make it pretty!
