Ingredients: Pot Stickers
½ pound lean ground pork ½ cup chopped green onion 1 Tablespoon grated gingerroot 24 wonton skins (about 3¼ inch square) 3 Tablespoons vegetable oil
Sauce
2 Tablespoons sugar 2 Tablespoons soy sauce 2 Tablespoons rice vinegar 2 Tablespoons water ½ teaspoon sesame oil ⅛ to ¼ teaspoon crushed red pepper flakes

Directions:Line a cookie sheet with baking parchment paper. In a bowl, mix pork, onion and gingerroot. Working with 1 wonton skin at a time, place 1 teaspoon pork mixture on center of each wonton skin. Moisten edges with water and fold in half over filling to form a triangle and seal the sides. Bring 2 ends together to form a hat shape. Place on cookie sheet and cover with a damp towel to keep from drying out.
In a large pan heat 3 quarts water to boiling. Add half of the pot stickers and boil about 5 minutes or until the edges are clear. Remove from water and drain thoroughly. Repeat with remaining pot stickers.
Meanwhile, in a small bowl mix sauce ingredients until sugar is dissolved; set aside.
On a non-stick skillet heat 2 tablespoons of the oil over medium heat. Add half of the pot stickers and cook 2 to 3 minutes until crisp and golden brown on bottom. Flip pot stickers and cook another 2 to 3 minutes until both sides are crisp and golden brown. Remove from oil. Repeat with remaining oil and pot stickers. Serve warm with the dipping sauce. |
