1 sheet puff pastry
1-2 Roma tomatoes, sliced
½ c. shredded Parmesan cheese
32 slices pepperoni (2 per appetizer)
fresh bail chopped
1 egg yolk
Italian seasoning

Directions:
Directions:
Line baking sheet with parchment paper. Thaw puff pastry according to package directions. On a floured surface roll pastry to 12"X12" square. Cut into 16 3"X3" squares. Working on a diagonal place 1 tomato slice in the center of the dough, top with 2 overlapping pieces of pepperoni in a line going from one corner to the opposite corner, sprinkle Parmesan cheese, Italian seasoning and fresh basil on pepperoni. Fold the two corners perpendicular to the pepperoni over one another and press lightly to stay in place. Brush all exposed surfaces with beaten egg yolk. Refrigerate at least 15 minutes. Bake at 360º 15-20 minutes.
