Mint Simple Syrup

2 cups granulated cane sugar
2 cups water
A handful of spearmint sprigs

Directions:
Directions:
1. Combine
Add the sugar and water into a high-sided sauce pan.
Bring to a roiling boil and then stir a few times to be sure the sugar has incorporated.
Remove from heat.

2. Infuse
Place the spearmint sprigs into the mixture, cover and let steep during cool-down.
The syrup will take on a slightly yellow/green color.

Once cooled, pour into container and refrigerate.

Makes about a quart.
 

Mojito

1 large sprig spearmint
.75oz simple syrup
1oz fresh lime juice
2oz white rum
3oz sparkling water
½ of spent lime hull
Crushed or chunk ice

1. Muddle
In a 16oz mixing glass, gently muddle together;
(I like to use a graduated mixing glass, one of those with the different recipes on em and the quantity markings.)
1 large sprig spearmint
.75oz simple syrup (I round up to 1)
Ideally, use a wooden muddler, but the handle of a wooden spoon will work also.

2. Mix the Rest
Add to the muddle mixture;
Crushed Ice or chunk
1oz fresh lime juice
2oz white rum
3oz sparkling water
½ of spent lime hull
Mix well with a spoon

3. Serve
Transfer from the mixing glass to a chilled (ideally) pint glass.
