2 tsp olive oil
1/2 cup chopped green pepper
small onion, chopped
2 cloves garlic, minced
1 cup uncooked white rice
15 oz can black beans (undrained)
1 1/2 cups water
1/2 tsp cumin
1 bay leaf
pinch oregano
salt and pepper

Directions:
Directions:
Heat oil. Add peppers, onion and garlic and cook 4-5 minutes. Add rice, beans and water. Stir in seasonings. Simmer on low heat stirring occasionally until rice absorbs most of water and just barely skims top of rice. Cover and turn to low and simmer 20 minutes.
