3 to 4 cups diced & chopped roasted chicken(see Note}
1 c. chopped onion
3/4 chopped jalapeno (seeded)
2 c. chicken broth
2 15 oz. cans enchilada sauce
4 15 oz.cans Mexican stewed tomatoes (diced onions & chiles)
1 7 oz. can diced green chiles
2 tsp. chili powder
1 c. white corn
1 15 oz. can black beans (drained)
Sour cream
Avocado, chopped
Green onion, chopped
Shredded cheese
Taco chips
Hot sauce

Directions:
* Note: A purchased cooked deli rotisserie chicken ,from your local grocery store ,will provide 3 to 4 cups of diced & chopped boneless & skinless chicken meat.
Remove chicken from the carcass. Boil the carcass in water with carrots, celery, onion to use for broth.
Fry onions and jalapeno in butter until tender.
Add: chicken broth, enchilada sauce, Mexican stewed tomatoes, diced green chiles and chili powder.
Simmer until flavors are well blended and soup a little thick.
Add: white corn, black beans, and as much chicken (chopped) as you want.
Simmer to blend the flavors and serve with any or all of the following - there is no right combination:
Sour cream
Chopped avocado
Chopped green onion
Shredded cheese
Taco chips
Hot sauce
