6 6.5oz. cans of chopped clams
2 c. diced celery
2 c. diced onions
2 c. diced potatoes
1/2 c. flour
1/2 c. butter
1 qt. 1/2 and 1/2
2 tbsp. red wine vinegar
6 slices bacon

Directions:
Directions:
Cook bacon in soup pot. Remove bacon when crispy and drain most of bacon grease. Add celery, onions and clam juice. If clam juice does not cover the vegetables, add a little water. Cook until celery and onions are tender.
In a separate 2 quart pan, blend flour and butter, stirring constantly for about 4 minutes to create a rue. Add 1/2 and 1/2 slowly, stirring constantly. Continue stirring until thickened. Add 2 tbsp. red wine vinegar.
Add 1/2 and 1/2 mixture to the celery and onions. Add diced potatoes, clams and bacon to the soup pot. Cook until potatoes are tender.
Serve with a dollop of butter, chowder crackers and garlic cheese bread (garlic cheese spread recipe).

Play with the ingredients, adding more of what you like and less of what you don't. I add the potatoes in at the end so that they don't become mush and thicken the soup.
