2½ cups sifted flour
1 tsp salt
2 T sugar
1 cup shortening
2 eggs, separated
milk

Filling:
6-8 apples, peeled and cut up
1½ cups sugar
1 tsp cinnamon

Crust:

Mix flour. salt, sugar and shortening together for pastry. Using 2 egg yolks, add milk to make ⅔ cup. Mix into crust mixture. Roll half of dough to fit 10 x 13 pan. Add filling on top of crust. Roll remaining crust out on wax paper. Cut crust into small sheets and peel off of wax paper and place thin sheets on top of filling, so that entire pan is covered with a thin layer of dough. (Several small pieces of dough are easier than trying to get one solid piece to cover entire pan.) Crimp edges like for a pie, so that the bottom crust and top crust stick together at edges. Beat egg whites until frothy and brush over crust. Bake at 400º for 30 minutes.
