2 cups oil - (Crisco is the best)
3 cups sugar (2 cups dark brown, 1 cup white)
3 cups flour
1 1/2 cups walnuts
4 1/2 cups shredded carrots (room temperature)
5 eggs (room temperature)
3 tsp. baking powder
2 1/2 tsp. baking soda
3-6 tsp. cinnamon
1/4 + 1/8 tsp. salt

Beat oil, sugar and eggs in a separate bowl. In another bowl, add flour, baking powder, baking soda, cinnamon and salt - I mix them together with a fork. Add the flour mixture to the oil/sugar/egg mixture. Mix well. Add carrots and walnuts.
Put in a greased 9 x 13" baking pan (I found aluminum works the best).
325 F for 1 hour and 15 minutes (time depends on your oven, just keep an eye on it)

Cream Cheese Icing

1 cup margarine (I Can't Believe It's not Butter works best)
8 oz cream cheese
4 cups icing sugar
2 tsp. vanilla

Mix the margarine, cream cheese and icing sugar then add the vanilla.
