2 cups wild rice
2 cans chicken broth
2 chicken breasts
1 tsp pepper
2 carrots, chopped
2 celery stalks, chopped
1 tsp poultry seasoning
1 onion, chopped
1 cup chopped broccoli and/or cauliflower stems
2 cups milk
3 T cornstarch
1 cup Velveeta cheese cubes

Directions:
Directions:
In a large pot, combine wild rice, chicken breasts, chicken broth and enough water to cover rice and chicken. Cook until rice is tender. Once cooked, remove chicken breasts, and cut into small pieces. Return to pot. Season with pepper and poultry seasoning. Add vegetables, and cook until tender. Add milk. More water can be added if it is too thick. If too thin, mix cornstarch and cold water in a shaker. Add slowly to the soup as it cooks, to thicken the broth. Add cheese at the very end.
