Spicy Enchilada Recipe

1 lb ground turkey
10 8-inch tortillas
1 14oz can rotel or canned tomatoes
1 green/red/yellow pepper - or combination
1 onion
1 packet taco seasoning mix
2 cans enchilada sauce - I like Ortega's
1 ½ cups shredded cheddar cheese

Directions:
Directions:
Brown the ground turkey. Add onion and peppers and saute until cooked through. Add the can of tomatoes and the taco seasoning packet. Allow to simmer for a bit, until the juice from the tomatoes thickens.

Pour ½ can of enchilada sauce in the bottom of a 9 x 13 pan. Place 1/10th of the meat mixture in the center of a tortilla and roll. Place seam side down in the pan. Repeat using all of the tortillas and meat mixture.

Pour remaining 1½ cans of enchilada sauce over the tortilla rolls, careful to cover all of the tortillas so they don't dry out in the oven. Cover entire pan with a layer of cheese. Bake at 350º for 30-45 minutes until cheese starts to brown.
