Directions: |
Directions:Remove the membrane covering the back of each rack and cut each rack in half and rub with olive oil. Combine rub ingredients in a small bowl; rub over each side of ribs. Wrap each half rack completely in heavy duty foil and seal edges. Grill over low, indirect heat (or bake in oven in an oven safe baking dish) at 275º to 300º F. for 2 to 2½ hrs. Remove ribs from foil (be careful when unwrapping as juices will accumulate in the foil); grill over very low direct heat, turning and basting frequently with sauce, for about 15 to 20 minutes until meat is tender and ribs are lightly charred. |

Notes: If you only want to fix one rack that's OK, just put the extra rub in a container with a tight fitting lid and store in the cupboard for the next time. Very easy to fix for a crowd! Allow half a rack for each man, 1/3 rack for the ladies. Ribs may also be baked in the oven for convenience or in case of rain. You can add a few drops of liquid smoke to the sauce to get that "cooked on the grill" flavor.
