2 cups all-purpose flour
1½ tsps baking powder
½ tsp baking soda
½ tsp salt
1 tablespoonful grated orange zest
1½ cups fresh cranberries or dried (use less sugar)
½ cup fresh pecans- coarsely chopped
¼ cup margarine ,softened
1 cup white sugar
1 egg
¾ cup orange juice

Directions:

Preheat oven to 350 degrees F
Grease and flour a 9x5 inch loaf pan

Whisk together flour,baking powder,baking soda and salt.
Stir in orange zest,cranberries and pecans. Coat pecans with some flour to prevent them from sinking to bottom of loaf.
Set aside

In a large bowl cream together margarine,sugar and an egg until smooth.
Stir in orange juice.Beat in flour mixture until just moistened.
Poor into prepared pan.

Bake for 1 hour in preheated oven,or until bread springs back when lightly touched.
Let stand for 10 minutes,,then turn onto wire rack to cool.
Wrap in plastic when completely cooled.
