leftover Amish bread starter (in bowl)
1 c. oil or applesauce
1 c. sugar
1 tsp. vanilla
3 large eggs
1½ tsp. baking powder
½ tsp. salt
2 c. flour
½ c. milk
½ tsp. baking soda
2 small boxes instant vanilla pudding
1 tsp. cinnamon
Pan prep:
1 tsp. cinnamon
3 tbsp. sugar
Optional add ins:
½ -1 c. raisins, nuts, chocolate chips, dried cranberries, coconut

Directions:
Directions:
Generously grease two bread pans. Mix 1 tsp. cinnamon and 3 tbsp. sugar. Sprinkle the cinnamon sugar mix evenly between the two pans. Mix the starter that was left in the bowl after portioning out starter for yourself, your friends, and family with all remaining ingredients. When thoroughly blended divide between the 2 prepared bread pans and Bake at 325º for 1 hour or until done. Test with a toothpick.

This bread is more like a coffee cake or muffin consistency. It is fun to do but I always end with more starter than friends who want it. The process could go on forever.
REMINDERS: do not use metal bowls or mixing spoons. Do not refrigerate. It is normal for the batter to thicken, bubble and ferment .If the bag begins to fill with air - open the bag and let it out or IT WILL EXPLODE and make a horrible mess!
