Crust:
2 c. flour
½ c. powdered sugar
2 sticks butter
1 tsp. vanilla
¼ tsp. salt


Filling:
2 c. sugar
2 tbsp. cornstarch
5 lg. eggs
1 tbsp. grated lemon peel
½ c. lemon juice
2 tbsp. butter melted
½ tsp. salt

Crust:
Heat oven to 350º. Line a 9X13" pan with nonstick foil. Put crust ingredients in food processor. Pulse until it forms a ball.


Filling:
Mix sugar and cornstarch. Then beat in 1 egg at a time. Beat well after each addition. Add lemon peel, juice, butter and salt until well blended. Pour over crust. Bake 20-25 minutes until set. Cool completely. Refrigerate one hour. Dust with powdered sugar. Lift out foil and cut into 24 squares.
