1 lb. Beef Sirloin, sliced in ⅛" strips
½ c. Onion, sliced
2 green peppers, cut in pieces
¼ c. Soy Sauce
2 Tbsp Oil
¼ c. dry sherry
1 tsp. cornstarch in 2 Tbsp cold water
⅓ c. water
½ tsp. sugar
½ tsp. ground ginger
pinch pepper
pinch garlic
3 ripe tomatoes, cut in wedges

1. Swirl oil in Wok
2. Quick fry beef approx. 2 minutes to brown. Stir as little as possible.
3. Add onion and green pepper. Stir fry 1 minute.
4. Add soy sauce, sherry and water.
5. Stir in seasonings. Cover. Cook 3-4 minutes. Uncover
6. Add tomatoes and cornstarch/water mixture. Cook 1-2 minutes
