20 slices thin white sandwich bread
1/4 c. butter, melted
1/4 c. butter
1 small onion, finely chopped
1 c. mushrooms, finely chopped
1 can Flakes of Ham*
3 T. flour
1 c. milk
1/4 tsp. salt
few grains of Cayenne pepper
1 tsp. lemon juice
Parsley for top

Cut crust off bread, brush both sides with melted butter and press into muffin pan, freeze overnight, uncovered.

To make the filling melt butter in a medium sized saucepan. Sauté onions and mushrooms until onions are transparent. Stir in ham, sprinkle mixture with flour and blend well. Add milk gradually continue heating and stirring until mixture thickens. Remove from heat and stir in salt, pepper, and lemon juice.

Fill each croissant with filling, place on cookie sheet and bake in pre-heated 350º F oven for 15 to 20 minutes or until mixture is bubbling. Garnish with a parsley sprig and pass around.
