Dressing:
½ cup red wine vinegar
¼ cup light olive oil
2 teaspoons poppy seeds
4 tablespoons sugar
1 teaspoon salt
½ teaspoon dry mustard
1 tablespoon minced red onion

Mix well, best if made ahead.

Salad:
1 pound fresh spinach
½ head lettuce
1 cup shredded swiss cheese
1 cup cottage cheese
½ cup sliced fresh mushrooms
½ red onion - sliced
2 hard boiled eggs
chopped tomatoes
Bacon cooked and chopped - optional

Mix and serve with dressing.
