3 medium to large eggplants
3 lbs fresh ground beef
3 tablespoons extra virgin olive oil
2 cups finely chopped onions
1½ heaping teaspoon chopped garlic
1 teaspoon salt
1 teaspoon white pepper
2 cups water
1 heaping teaspoon cinnamon
1 cup tomato paste
½ cup grated Romano cheese mixed with ½ Kefalotyri cheese
3 cups red vegetable sauce

For Bechamel topping
6 cups whole milk
½ lb butter
1 cup flour
2 eggs
2 cups yougurt
1½ teaspoon salt
½ cup grated Romano cheese mixed with ½ cup grated Kefalotyri cheese
¼ teaspoon ground nutmeg (optional)




Directions:
Directions:
Skin and slice eggplant lengthwise into ¼ inch slices. dip in oil and place on lightly greased sheet pan
and bake at 350º for 20 minutes until golden brown.

In large pot, saute onions, garlic, salt and pepper in oil until clear. Add beef and water, mixing well and cook over medium heat until beef is almost done.

Strain meat to remove excess liquid and return to medium heat. Add cinnamon and tomato paste and cook over low
heat until well mixed.

In a 9 X 13 inch pan, layer bottom with eggplant, sprinkle with cheese and top with beef mixture. Repeat finishing with
a layer of eggplant.

Top with bechamel and bake at 350º for 40 minutes until golden. Cut into squares, top with grated cheese and red sauce.

Bechamel Topping
Bring milk almost to a boil and remove from heat
In a separate pan, melt butter and slowly add flour, mixing well, making a heavy roux, then add nutmeg.

Remove from heat, add milk, and stir to a thick paste consistency. Fold in eggs, yougurt, salt and cheese mixture.
Whisk and mix well
