2 T. olive oil
1 T. cumin seeds
2 cups chopped onion
1/2 cup chopped bell pepper
2 cloves of garlic, minced
2 15-oz cans black beans, rinsed and drained
1 14 1/2-oz can of diced tomatoes, undrained
1 1/2 cups water
1 T. chili powder
2 tsp. paprika
1/2 tsp. crushed red pepper
1 tsp. dried oregano
Salt

1. In a large saucepan, heat olive oil over medium heat. Add the cumin seeds; cook and stir for one minute. Stir in chopped onion, bell pepper, and garlic. Cook and stir about 5 minutes or until onion is tender.
2. Stir in black beans, undrained tomatoes, the water, chili powder, paprika, and crushed red pepper.
3. Bring to a boil; reduce heat. Simmer, uncovered, for 20 minutes. Stire in oregano. Season to taste with salt and pepper.
4. OPTIONAL: Top individual servings with green onions, sour cream, cilantro, and/or cheese.
