2 tbsp. butter
4 c. shredded cheddar cheese
1 tbsp. Worcestershire sauce
½ tsp. dry mustard
dash cayenne pepper
2 eggs, slightly beaten
½ c. light cream
2 English muffins
4 slices Canadian bacon ¼"-½" thick, heated
4 slices tomato, about ½" thick

Directions:
Melt butter in 2 quart saucepan over medium low heat. Add cheese, stirring constantly until cheese is melted. Stir in Worcestershire sauce, mustard and cayenne. Combine eggs and cream. Remove cheese mixture from heat. Stir in egg mixture until well blended. Return to medium heat and cook until thickened, stirring constantly. Split, toast, and butter English muffins. To assemble place one slice of hot Canadian bacon and one slice of tomato on each muffin half. Divide cheese sauce equally over the muffins and serve immediately.
