1 large head of cauliflower cut into bite size pieces (6 c.)
6-8 slices of bacon, cooked and crumbled
6 tbsp. chopped chives
½ c. mayonnaise
½ c. sour cream
2 c. Colby jack or cheddar cheese, shredded

Directions:
Directions:
Preheat oven to 425º. In large pot, cook cauliflower in boiling water 8-10 minutes. Drain and let cool. In large bowl, combine sour cream, mayonnaise, ½ of the cooked bacon, 3 tbsp. chives, 1 c. cheese and cooled cauliflower. Mix well. Place in a 9" baking dish. Cover with remaining cheese and sprinkle with remaining bacon. Bake 15-20 minutes. Top with remaining chives before serving.
