3 Lasagna Noodles
¾ c. Ricotta cheese
½ tsp Minced Chives
½ tsp Dried Oregano
½ tsp Dried Basil
24 Slices Pepperoni
3 Slices Mozzarella cheese (Swiss cheese can also be used) Cut into thirds
1 c. meatless spaghetti sauce
¼ c. Shredded Parmesan cheese
Optional- Mushrooms may also be added

Cook noodles according to package directions, drain. Combine ricotta cheese, chives, oregano and basil; spread ¼ c. over each noodle to within ½ inch of edges. Top with pepperoni, cheese, and mushrooms; carefully roll up.

Place seam side down in a greased shallow 1-qt. baking dish; top with spaghetti sauce. Cover and bake at 350º for 20-25 minutes or until bubbly.

Uncover; sprinkle with Parmesan chees. Bake 5 minutes longer or until cheese is melted. Let stand for 5 minutes before serving. Yield: 3 servings

This recipe is great for downsizing a large Lasagna. But after making it a few times I did upsize to four rollup as we both could eat 2!
