1 c. brown sugar
2 tbsp. corn syrup
1 tbsp. water (just enough to wet the brown sugar)
⅛ tsp. salt
⅛ tsp. cream of tartar
1 egg white
1 tsp.vanilla

Directions:
Directions:
Combine brown sugar, corn syrup, water, salt and cream of tartar in a saucepan. Bring to a boil and boil until mixture reaches 210º on a candy thermometer. Beat egg white until stiff peaks form. Pour the mixture over stiffly beaten egg whites, and stir in vanilla. Continue beating until the candy holds its shape when dropped from a spoon. Drop the mixture by spoonfuls onto wax paper, let cool.
