2 tbsp. Knox© gelatin
9 tbsp. cold water
2 c. sugar
1 c. boiling water
1 tsp. vanilla
powdered sugar

Directions:
Dissolve gelatin in cold water. Bring 1 c. water to a boil. Add sugar. Cook until sugar forms a soft ball when dropped into cold water (235º-240º ). Stir in vanilla. When mixture starts to thicken, pour slowly over gelatin and beat until it holds its shape (not stiff peaks) and can be dropped from a spoon into powdered sugar. Dust with additional powdered sugar and let sit 6 hours or overnight. Store in an airtight container.

You can also spray a pan with non stick cooking spray and dust bottom and sides with powdered sugar. Pour batter into pan and dust top with additional powdered sugar. Let sit 6 hours. Cut into cubes with a pizza cutter dipped in powdered sugar. Dust all cut edges of the marshmallows with powdered sugar. I've been told to mix equal amounts of powdered sugar and cornstarch for dusting but I haven't tried that method.
