Ingredients:
Ingredients:
2 lb dried navy or great northern beans
Onions, sliced
1 lb bacon, uncooked
Brown sugar
1 medium to large sized bottle ketchup
Salt (optional)

Directions:
Directions:
Cover the beans with water. Bring to boil and simmer for 1 hour. Shut heat off and let sit for 10-12 hours. Drain.
Place ½ the beans in a greased roaster. Sprinkle with salt. Layer with bacon, sliced onions, brown sugar, and ketchup.
Repeat layers - beans, salt, bacon, onions, brown sugar and ketchup. Add water to cover all. Put lid on roaster. Bake at 300ºF for about 8 hours. Add water if beans start to dry out. Bake until tender.

Cook's notes: I do not have quantities on this. I literally make a layer of each item. I sprinkle the brown sugar - probably about a half cup to one cup per layer but not sure. I used to do the bean simmer part in the morning. I would put together in evening and bake overnight when we had parties. When I woke up, it smelled so good! I would stir the beans, add water if needed (if they seem too dry), and taste! If beans not tender, bake longer. It is one of those dishes that slow and long cooking works best.
