Can be used for fruit tarts, mince pies, etc.

8oz plain flour
1 tsp icing sugar
½ tsp salt
5oz butter
medium egg yolk
1 tsp lemon juice
1 tbsp iced water
1 tbsp iced water to rinse out egg bowl

Directions:
Directions:
1. Sift flour, icing sugar and salt into bowl.

2. Dice chilled butter quickly and rub into pastry (should use two knives as pastry should be handled as little as possible.

3. Make a dough by adding egg yolk, lemon juice and gradually adding water.

4. Wrap pastry and chill for one hour before use.
