2 C. cooked rice, I use Calrose and a rice cooker
2 eggs
1 T. sesame oil
˝ C. chopped onion
˝ C. peas and carrots, or veggies of choice
˝ C. soy sauce
2 T. peanut sauce
1 T. sesame seeds
1 T. butter
1 T. garlic
Salt and pepper
* This recipe is one I just eyeball, so amounts may be altered to taste. You can also add meat of choice.

In a large skillet heat sesame oil. Add onion, garlic, and veggies, sauté. Move to one side of pan, and add butter to other side. Add eggs to butter and scramble. Add cooked rice, peanut sauce, soy sauce, salt & pepper, and sesame seeds. Stir and heat through.

We love going to Japanese grills where they cook the food in front of us. This is my copycat version of their fried rice. It is a favorite in our house, especially for Logan.
