Ingredients: 1) one medium onion 2) 2- 3- cloves of garlic 3) 1/2 pound sweet or mild sausage (or 2 patties) 4) one cup of Orzo pasta 5) pecorino romano cheese (to taste) 6) 4-6 Red bell peppers (green if you like but red are sweeter) 7) 1 1/2 cups of tomato sauce or marinara 8) one 8 oz package of portobello mushrooms

Directions:1) Chop up onion, garlic, mushrooms and sausage to medium grind and sauté in olive oil and 1/4 stick of butter until water from mushrooms is gone. 2) Cut the tops off peppers, clean and boil for 6-7 minutes. Set peppers aside. 3) in the same boiling water cook the orzo until done. 4) Drain the orzo and put in pan with the onion mushroom mixture. Add sauce or marinara and sprinkle with pecorino cheese. Fill peppers. 5) Place peppers in a casserole dish,cover with foil and add a little water to the bottom. Bake for 45- 50 minutes at 350 degrees. 6) Serve any remaining mushroom sausage mixture along side your peppers. |
