2 beef kidneys
6 large onion
1 minced garlic cloves
3/4 cup flour
2 tlbs dry sherry
4 tlbs butter
1 tsp salt
black pepper
6 waffles

Directions:
Directions:
Parboil kidneys for 15 minutes in salted water drained and rinsed to remove all alkaline odors.Cover parboiled kidneys with 2 quarts of water, add onions garlic salt and pepper. bring to a boil reduce heat cover and simmer for 1 hour. remove kidneys from broth,cool trim and dice. mixflour with 1 cup water,add to broth and cook until thickened,stirring constantly.Add sherry, Saute kidneys in butter for 5 minutes an add to thickened broth. Serve on waffles.
