MEAT

3-4 lbs pork loin
1 can red enchilada sauce
1 8 oz can tomato sauce
1 cup brown sugar
1 cup Coca-Cola

TOMATILLO DRESSING

1 packet buttermilk ranch dressing
1 jalapeno
1 cup buttermilk
1 cup mayo
2 tomatillos, diced
1/2 bunch cilantro
1 clove garlic
Juice of one lime

Directions:
Directions:
1. Cut pork loin into chunks and place in slow cooker. This allows all the flavors to permeate the meat.
2. Mix red sauce, tomato sauce, brown sugar, and coke. Add to crock pot.
3. Cook on low for 8-10 hours.
4. Shred the meat and allow to cook for at least 30 minutes longer.

TOMATILLO DRESSING

1. Place all ingredients in a blender or food processor and blend well.
2. Drizzle the dressing over the meat after serving.
