4 boneless, skinless Chicken Breasts
Salt and Pepper
1 c. Hummus (any flavor, we LOVE garlic for this)
1 zucchini, chopped
1 yellow squash, chopped
1 Onion, chopped
1 tbsp. Olive Oil

Directions:
Directions:
1. Preheat oven to 450º.
2. Pat the Chicken dry. Season with salt and pepper.
3. Mix the zucchini, squash and onion in a bowl with the olive oil, salt, and pepper and then spread in the bottom of at 13x9 baking dish
4. Place the chicken breasts on top if the vegetables and cover with 1/4 of the hummus on each breast.
5. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
