5 cups chicken breasts , cooked and cubed (or shredded)
1 cup sour cream
2 14.5 ounce cans condensed cream of chicken soup
1 envelope dry onion soup mix
2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
1/2 cup melted butter
1 Tablespoon poppy seeds

Directions:

Preheat oven to 350 degrees.

Boil raw chicken breasts with salt and pepper until done. I like to boil it with some bullion cubes or in chicken stock with 3 cloves of garlic and bay leaves. You can always leave those out though.

Let chicken cool slightly and cut into one inch cubes. Place cubed chicken in a 9X13 casserole dish. *Note: Some people layer some cooked rice on the very bottom underneath the chicken so that it's a meal in one.

Stir together the condensed soup, sour cream, and dry onion soup mix.

In a separate bowl, stir together the crushed crackers and melted butter. Sprinkle over the chicken and sauce.

Bake for 20-30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly.

Serve plain or over rice.

The real name is Poppy Seed Chicken, but I got tired of the kids asking a million times what I was cooking, answering, and them asking again 5 minutes later because they weren't paying attention when I answered. I also omitted the poppy seeds because I hate them getting stuck in my teeth.
